Hatsune is a Japanese counter inside the Grand Hyatt La Manga Club hotel, in the Campo Norte residential development in Atamaría. Rather than an à la carte restaurant, it serves a single omakase sushi tasting menu, prepared by the chef in front of diners at a counter seating only around ten people.

The tasting menu

Dinner unfolds through several courses, mainly nigiri, with tuna featuring prominently and some pieces finished with a flame. Several customers describe sushi with the chef's own twists rather than traditional versions, and a sweet finale also appears in reviews. The drinks menu includes cocktails.

Portions are small, as is usual for a tasting menu, and some diners leave hungry, so it is best to bear that in mind.

Bookings

With so few seats, booking is essential. Many diners are guests of the hotel itself. The entrance, interior and toilets allow wheelchair access.
